Do you have leftover cranberries & wondering what to do with them? Here’s a great recipe that is adapted from one of my grandmother’s recipes. It’s so delicious and very easy to make. She adds pecans to this as well and it is wonderful. I usually leave them out due to my son’s nut allergies, but they are AMAZING either way.
Easy Cranberry Pie Recipe

Ingredients
- 2 Cups Cranberries (Raw)
- 1 Cup Pecans (Chopped) (optional)
- 1 Cup Sugar
- 2 Eggs
- 1 Stick Butter and 1/4 Cup Shortening (Melted Together)
- 1 Cup Sugar
- 1 Cup Self-Rising Flour
Instructions
- Butter The Pie Plate.
- Cover bottom of pie plate with cranberries, sprinkle pecans then sugar over berries.
- Let sit while you mix the 2 eggs, stick of butter + 1/4 cup shortening (melted together), cup of sugar and cup of flour
- Pour Mixture over Nuts and Berries.
- Bake at 325 Degrees For 45 Minutes to an Hour or Until Browned.

Iam going to try this. It sounds good, but I would leave out the margarine and use butter instead.

Making it now, thanks. I added some almond flavoring and some almonds (I guess you could add vanilla flavoring instead). My batter wasn’t “runny” so I could “pour” it so I added a bit of water…..here’s hoping it turns out well lol

This is actually quite similar to a recipe I have in a Boston Cookbook I own. It’s called Cranberry Pie and you (obviously) make it in a pieplate and cut in pie slices…I love that one too! (I’m originally from Boston so I grew up on cranberries).
