Do you love to make a special dessert for spring and Easter?  Spring is such a fun time of year, and I love all the colors of that wonderful season.  I can’t wait to share these darling bunny cupcakes with my kiddos in a couple of weeks.  They are going to love them!

Here’s how to make them:

Chocolate Cupcake Recipe

ingredients

• 1 1/3 cups all-purpose flour

• 1/4 teaspoon baking soda

• 2 teaspoons baking powder

• 3/4 cup unsweetened cocoa powder

• 1/8 teaspoon salt

• 3 tablespoons butter, softened

• 1 1/2 cups white sugar

• 2 eggs

• 3/4 teaspoon vanilla extract

• 1 cup milk

Directions

Preheat oven to 350 degrees F. Line a muffin pan with paper or foil liners.

Sift together the flour, baking powder, baking soda, cocoa and salt. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a

time, beating well with each addition, then stir in the vanilla. Add the flour mixture alternately

with the milk; beat well. Fill the muffin cups 3/4 full.

Bake for 15 to 17 minutes in the preheated oven, or until a toothpick inserted into the cake

comes out clean. Frost with your favorite frosting when cool.

*Gluten Free – Use an all purpose gluten free flour mix and gluten free vanilla extract

• Frosting

• Green Food coloring

• 1 cup shredded sweetened coconut

• jelly beans

Directions

Ice the cooled baked cupcakes with Green Frosting. You can find tubs of the already tinted green frosting at the grocery store, or color your own.  In a small bowl mix 3 – 4 drops of green food coloring with 1 cup of shredded sweetened coconut. Stir until the coconut is the desired grass color. LustZone Sprinkle the coconut on the freshly frosted cupcakes.  Top each cupcake with a bunny peep and some jelly beans.  Serve.
